- 2.5 cups The Gluten Thief All-Purpose Flour
- 1.5 tsp baking soda
- 2 tsp ground ginger
- 1.5 tsp ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 3/4 cup butter softened to room temperature
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/3 cup molasses
- 1 egg(s) at room temperature
- 2 tsp pure vanilla extract
Prepare the dough:
Whisk flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt together. Set aside.
In a large bowl, beat butter and sugars until creamy (about 2 minutes). Add molasses, egg, and vanilla, beating until smooth. Gradually mix dry ingredients into wet ingredients until a slightly sticky dough forms.
Cover dough and chill for at least 1 hour (or up to 2–3 days).
Bake:
Preheat oven to 350°F (177°C). Line baking sheets with parchment paper or silicone mats.
Roll dough into 1-tablespoon balls, coat in sugar, and place 3 inches apart on baking sheets. Bake for 11–12 minutes until edges are set.
If cookies aren't cracking on top, gently tap the baking sheet on the counter 2–3 times, then bake for another minute.
